Fresh tarragon lends a strong and distinct savory herbal flavor to this twist on the classic, Tomato Tarragon Soup.
Tomato Tarragon Soup
28-oz can tomatoes (whole)
1 yellow onion
2 cloves of garlic
4 c chicken stock
1 T tarragon (dried)
½ oz tarragon (fresh)
½ t sugar
red chile flakes
olive oil
black pepper
salt
1 Roughly chop the onion and garlic, and sauté in oil until soft, about 5 min.
2 Add the rest of the ingredients and seasonings (except the fresh tarragon), breaking up the whole tomatoes. Bring to a boil then reduce the heat and simmer, covered, for 20 min.
3 Add the fresh tarragon, then purée in batches until smooth.
