Warm or chilled, a dessert soup like Sweet Potato and Apple pairs very well with old-fashioned iced oatmeal cookies.
Sweet Potato and Apple Soup
1 lb sweet potatoes
1-in. piece of ginger
½ t cinnamon
½ c apple cider vinegar
1 Peel and chop the potatoes; core and chop the apples (leave peel on). Crush the ginger.
2 Add all the ingredients in a pot with 1 c water and bring to a boil. Reduce the heat and simmer, covered, for 30 min.
3 Purée the soup in batches until smooth. Serve warm or chilled.
