
Made with a variety of meats and potatoes, Beef Fricot is a traditional Acadian/French Canadian dish but with a number of historical Louisiana variations.
Beef Fricot

1 Dredge the beef in the flour, coating each piece and shaking off excess. Briefly sear the beef in oil and butter over medium-high heat to brown on each side. Remove and set aside.
2 In the same oil, sauté the onions until soft, about 5 min. Deglaze with a little water or stock, scraping up any browned bits that remain.
3 Add the beef, potatoes, cooked onions with liquid, broth and seasonings to a heavy pot or slow cooker. Bring to a simmer and cook over low heat, covered, for 4-6 hours or until all ingredients are tender and cooked through. Season to taste.
Finish with finely chopped chives. Serve with crusty bread.
